Thanksgiving!

Eating the turkey like a true Viking!

Yep, we did it, we had Thanksgiving dinner in Denmark!

This was the 2nd year that I decided to do an official Thanksgiving feast - American style. All of my recipes are for more than 4 people so we end up with lots of leftovers, but that's just fine by me.

I pulled out my heirloom china and Ole's wonderful parents, Anny and Bruno, joined us again this year to have traditional dinner - Turkey, Sweet Potatoes (found in Denmark - finally!), mashed potatoes, stuffing, cranberry sauce, creamed spinach and to top it all off.. A real, honest to goodness, pumpkin pie. Yummy!

We all ate way too much, of course!

  1. This brought back so many memories of my Thanksgiving in Denmark. I had to make everything from scratch....my first time ever hosting a dinner like that. It was fun!

  2. What do you do with the sweet potatoes (I don't mean eat them!)? I just figure they could be some sort of substitute for my elusive pumpkin in roasts...

  3. oh, so with THanksgiving dinners, you have mashed, rather than roast potatoes... I never knew that. Is there a special mash system required?

  5. Jacki: It's only the 2nd time I've ever made a thanksgiving dinner and both times it's been here. That was always my mom's job!

NQD: We had the sweet potatoes mashed with brown sugar and butter, etc, but you can cook them in a million different ways. Many people use them and make sweet potato pie rather than pumpkin pie, so yes, depending on the recipe it's likely you could use them as a substitute - of course in Denmark they are labeled as søde kartofler.

And yeah, I mash the regular potatoes too! My system, boil the potatoes until they're tender and then stick them in the big old mixing bowl with butter and some milk! (I prefer them a bit lumpy - proves that you used the real thing!)

Kelli: Tak! The puppies had MORE than their share of turkey, and stuffing and whatever else they managed to sniff out! We had fun playing 'grib' with some of the leftover stuffing. Miss Lexi is an eating machine!

  6. Don't forget to put marshmellows on your sweet potatoes! YUM! I had to make a batch for all the moms at the international school because they thought it was so odd to have marshmellows on a dinner side item! :) How did you make a pumpkin pie?
Did you know they have evaporated milk at the middle eastern stores?

  7. Regretfully, the marshmallows were absent from the sweet potatoes. I have only found marshmallows one time in DK and I cannot remember which store, or which section of said store :(
